PHOTOS BY TIM BOTTCHEN Following in his mother and fathers’ entrepreneurial footsteps, Bryan always knew he wanted to own an establishment in his hometown of Millstadt, IL. After spending 9 years homebrewing, winning several awards and becoming well versed in the craft beer world, Bryan and Lizzy Schubert decided it was time to take the leap and turn a passion into a profession, Millpond Brewing & Incubator. The concept of Millpond Brewing & Incubator was developed alongside his brother in law Jeremy Schueler. Taking a different approach, Millpond Brewing and Incubator will offer beers professionally brewed by Bryan, but also provides an opportunity for homebrewers to brew their recipes and offer it for sale to the public. Homebrewers are a creative, passionate, and extremely talented bunch but can’t efficiently showcase their talents to the masses and Bryan hopes to change that, while also offering the public his approach to brewing. Millpond Brewing & Incubator’s focus is and always will be on improving our community, focusing on local brewers and ingredients. Bryan and Lizzy hope to be able to welcome you soon.
